Bread Machine
Banana Chocolate Chip Bread
1 lb Loaf / 1.5 lb Loaf
1/3 cup milk / 1/2 cup
1/3 cup mashed very ripe banana / 1/2 cup
1 large egg / 1
1 tbsp butter or margarine / 1 tbsp
3/4 tsp salt / 1 tsp
2 cups bread flour / 3 cups
1/4 cup chocolate chips / 1/3 cup
1 1/2 tsp Bread machine yeast / 2 tsp
Use the 1 pound recipe if your machine pan holds 10 cups or less of water.
Add ingredients to bread machine pan in the order suggested by manufacturer,
adding mashed bananas with milk, and chocolate chips with flour. Recommended
cycle: Basic/white bread cycle, light or medium/normal color setting. (Can
use more chocolate chips and put them in at the fruit/nut signal on your
machine.)
Bread Machine Capacity Chart
If a recipe doesn't include the bread machine size:
1 lb machine = 2 cups flour maximum
1 1/2 lb machine = 3 cups flour maximum
2 lb machine = 4 cups flour maximum
To find your bread machine pan size:
Fill the bread pan with water and measure it out in cups
Less than 10 cups of water = 1 pound
11-13 cups of water = 1 1/2 pounds
More than 13 cups of water = 2 pounds
Bread Machine Cheese Bagels
1 cup grated cheese ***, Cheddar, Jack, etc...
1 1/8 cup water, lukewarm
3 cups white bread flour
3 1/3 tbsp brown sugar
1 tsp salt
3 1/4 tsp active dry yeast
*** Reserve half of the cheese to sprinkle on top of bagels before baking.
Insert ingredients in bread machine according to manufacturer's instructions.
Remove the dough from the machine after the first knead - approximately 20
to 30 minutes.
Place dough on a floured surface. Divide into 8 parts. Form balls, gently
press thumb through center of ball and slowly stretch into bagel shape.
While bagels rise, bring three quarts of water and one tablespoon of sugar
to a rapid boil in a large saucepan. Drop test dough (see hints below).
Using a slotted spoon, drop 2-3 bagels into rapidly boiling water. Boil on
each side for 1/2 minutes. Remove and cool on rack 1 minute, brush with egg
and sprinkle with sesame or poppy seeds, if desired.
Bake at 400 on a baking sheet sprinkled with cornmeal, until golden -
approximately 15 minutes.
** Bagel Success Hints:
** When forming the bagels, set aside two 1/4" balls of dough. When the bagels
have doubled in size, drop the test dough into boiling water. The dough should
pop to the top right away. When this happens, it is time to boil the bagels.
** A quick spray of non-stick vegetable coating on the top of the bagel may
be substituted for the egg wash.
** To make bagel sticks, cut bagel before rising and lay out in a straight
line. Roll sticks in a combination of sesame and poppy seeds with a pinch
of garlic powder. Let sticks rise, boil, and bake as described in the above
directions.
** To make bagel chips, slice leftover bagels horizontally into thin slices.
Brush with butter or margarine on one side. Lay (butter side up) on an ungreased
cookie sheet and bake at 325 for 12-15 minutes until golden brown and crisp.
