Cafe Au Lait Bread

1 Pound Loaf
1/2 cup strong coffee* see note
1/2 cup milk
4 tbsp. butter
1/4 cup sugar
1/2 tsp salt
1/3 tsp cinnamon
2 2/3 cups bread flour
1 1/2 tsp yeast

Bake in bread machine according to manufacturer's instructions.

*Note: I used a flavored coffee when I made this, either Irish cream of hazelnut, I forget which, but it was super.



California Dip Bread (bread machine)

Would be excellent with deli meats or used grilled for other sandwiches! The mini-loaves or a decorative tube pan would turn it into wonderful cocktail bread. Tastes like a very moist, slightly sweet double-onion bagel. I am anxious to use this same recipe and experiment with other soup mixes!!

1 pkg yeast
3 1/3 cups flour
1/4 tsp baking soda
1 egg
3/4 cup cottage cheese
3/4 cup sour cream
3 tbsp sugar
1 1/2 tbsp butter
1/4 cup water
1 Envelope Lipton's Onion Soup Mix (more/less to taste)

In the order listed, place the first 4 ingredients into the pan. Slightly warm the next 6 ingredients and pour into pan. Select white bread and push 'start'.

NOTE: I have made this recipe manually, and it's fabulous. I used an entire envelope of Lipton's Recipe Secrets (Onion), and did the following:

Dissolve the yeast in 1/4 warm water in the bottom of large mixing bowl. Add the butter, egg, sour cream, and cottage cheese (all slightly warmed) and mix well. Stir in the soup mix and the sugar, and lastly the baking soda, mixing all well. Add the flour about 1 cup at a time, mixing thoroughly - after last addition, start using you hands to mix and knead. Knead well (about 10-15 minutes) until dough is elastic (my dough was too sticky and I ended up adding a little additional flour). Let rise until double (about 1 1/2 hours) in a lightly greased bowl (<-- important! I didn't grease the bowl and it got sticky on the bottom); punch down and knead lightly.

Place dough in greased baking container of choice, and let rise again until double again (about another 45 minutes). Bake at 350 degrees for 40-45 minutes, or until cake tester comes out clean. Remove from pan immediately and cool completely on cooling rack.

This recipe made enough for 1 loaf in my bread crock (about 3/4 of the dough), and the remaining 1/4 made 2 mini-loaves. The mini-loaves, however, only bake about 15 minutes or so. Would probably produce two regular-sized loaf pans of bread.


Calzones (Bread Machine Recipe)

1 cup water
2 tablespoons olive oil or cooking oil
3 cups bread flour
2 teaspoons dried basil, crushed
1 teaspoon bottled minced garlic
3/4 teaspoon salt
1-1/4 teaspoons active dry yeast or bread machine yeast
12 ounces lean ground beef
3/4 cup sliced fresh mushrooms
1/3 cup chopped green pepper
3/4 cup shredded mozzarella cheese
3/4 cup pizza sauce
1 tablespoon milk

Add the first 7 ingredients to a 1-1/2- or 2-pound bread machine according to the manufacturer's directions. Select the dough cycle. When cycle is complete, remove dough from machine. Punch down. Cover and let rest for 10 minutes. Meanwhile, for filling; in a large skillet cook the ground beef, mushrooms, and green pepper until meat is brown. Remove from heat; drain off fat. Stir in the cheese and the pizza sauce. Divide the dough in half. On a lightly floured surface, roll each half into a 10-inch square. Cut each square into four 5-inch squares. Divide the filling among the squares; moisten edges. Lift a corner of each square and stretch to opposite corner over filling. Seal edges by pressing with tines of a fork. Transfer calzones to greased baking sheets. Prick tops with a fork. Brush with the milk. Do not let rise. Bake in a 425 degree F oven for 12 to 15 minutes or until golden brown. Remove from baking sheets; cool slightly on wire racks. If desired, serve calzones with additional warmed pizza sauce. Makes 8 servings.


Cake Mix Bread (BREAD MACHINE)

1 1/4 cup warm water
2 tablespoons butter or margarine (not lite margarine)
1 cup yellow cake mix (can use Jiffy yellow cake mix-has about 2 cups in a box)
2 1/2 cups flour
2 teaspoons dry yeast

Add ingredients according to your bread machine.

Cycle:White and timer.

Makes 1 large loaf

Note with recipe: Try using different cake mixes for different flavors. I have used lemon, orange, banana, spice and cinnamon apple muffin mixes. All have turned out great.

Note from source: This was a wonderful bread that everyone almost gobbled right up. It raises wonderfully and has such a nice soft texture. I used a yellow cake mix, but I'm anxious to try other flavors of cake mix too.
