Cornmeal Herb
Bread
Makes 1 loaf, 8 slices
1 package yeast
1 cup unbleached flour
3/4 cup bread flour
1/2 cup white or yellow cornmeal
4 tablespoons fresh herbs*, chopped
1 tablespoon vegetable oil
1 teaspoon salt
1 tablespoon sugar
7/8 cup water
*Chives, cilantro, Italian parsley, or basil, OR 4 teaspoons dry herbs.
Put all ingredients, in the order given, into the bread machine, select WHITE
bread, and push Start. Serve warm with sweet butter.
NOTE: You'll like the crunchy texture of the corn meal in the top crust.
The herbs create a wonderful fragrance while it's baking and a spectacular
taste once it's done. Serve warm with sweet butter.

3/4 cup water -- or more
1 tsp lemon juice
3 Tbs. powdered milk (have used reg. &
buttermilk)
1 tsp salt
1 1/2 Tbsp. Crisco (used plain)
2 Tbsp sugar
2 Cups bread flour
1/2 Cup cornmeal
1 1/2 tsp yeast (used SAF)
Add ingredients in order per mfg. instructions. Bake on basic cycle. (I used
medium crust and it's been a nice golden brown both times).

NOTES : Risa's variation: 1 can of chopped green chiles, drained & dried
with a paper towel, in at the beeps.
Cottage Cheese Cornmeal Bread
For Bread Machines
1.5 pound loaf
1 cup milk
3/4 cup cottage cheese
1 tablespoon dried onion
2 teaspoons chilies
2/3 cup cornmeal
1 tablespoon olive oil
1 tablespoon sugar
2 2/3 cups flour
2 teaspoon yeast
Use RAPID bake and dark crust.
