Cracked Wheat
and Fruit Bread
3/4 cup cracked wheat
1/2 cup dried cranberries
1/2 cup dried diced apricots
1/4 cup brown sugar
1 teas salt
1&1/2 teas active dry yeast
1&1/4 cup boiling water
1/3 cup water
1&1/2 tbsp margarine or butter
1&1/2 cups all purpose flour
1&1/2 cups bread flour
In a large bowl combine cracked wheat, brown sugar, salt, butter and boiling
water.
Mix well and allow to cool.
Put flour in abm. Add cold water to cracked wheat and make sure it isn't
overly hot. It should be luke warm. Add yeast. Set your abm for raisin bread
or regular cycle, add fruit at beep. The order of ingredients may be different
for your machine. This is wonderful toasted too.
Cranberry Nut Bread (bread machine)

4 oz orange juice
1/4 cup butter
1 large egg
2 cups flour
3/4 cup sugar
1 tbsp grated orange peel
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup coarsely chopped cranberries
1/2 cup chopped nuts (i use pecans)
Have all ingredients at room temperature. Measure orange juice, butter and
egg into the bread pan. In a medium mixing bowl, combine remaining ingredients
except cranberries and nuts. Add this mixture to the bread pan. Then add
the cranberries and nuts. Set on the setting for quick breads.
Cranberry Orange Bubble Bread (bread machine
dough cycle)
Yield: 1 Loaf
DOUGH
3 cups flour
2 tsp yeast
1 tbsp sugar
2 tsp grated orange rind
1 tsp salt
1 cup milk room temperature
1 egg
1 tbsp margarine
3/4 cup dried cranberries
GLAZE
1 egg beaten
Add ingredients to the bread machine according to manufacturers directions.
Select dough cycle. Add cranberries at the beep or after first kneading.
When dough cycle is done, divide dough into 16 pieces; shape each into a
ball and place in a greased 9-inch springform pan.
Cover with a tea towel and let rise until doubled about 30 to 45 minutes.
Brush lightly with egg and bake at 375 for 20 to 25 minutes or until golden.
Remove from pan immediately and cool on a wire rack
Note: I used 1 cup of frozen cranberries and added 1/2 cup of flour and it
just turned out perfect. I also made up a milk and icing sugar glaze and
put that on the top. If there are any leftovers this would make a great bread
pudding.
