Caraway Seed Rye
Bread

One of the problems with bread machines is that the density of whole grain
or rye breads can approach that of neutron star material. So after experimenting
with a number of variable I have a never-fail lighter, aromatic rye bread
recipe that is great for slicing and sandwich making. I use a Hitachi HB-B201+
bread machine.
1 1/4 cups of water (I heat the water for 1 min in a microwave
and pour it into the bread machine pan).
1 1/2 tablespoons of butter or vegetable shortening.
2 1/2 cups of bread flour
3/4 cups of rye flour
3 tablespoons of sugar
1 teaspoon of salt
1 tablespoon of dry milk
1 tablespoon of caraway seed
2 tablespoon of wheat gluten
2 1/2 teaspoons of dry yeast
After the dough has kneaded for about 5 min I make sure that its composition
is a solid twirling ball. If the dough looks overly sticky or is smearing
around in the bread pan I add bread flour in 1 tablespoon amounts until the
dough firms up. This will prevent the collapse of the center of the loaf
during the second rise. The bread machine is set to the "bread" menu and
the bread color setting is set to medium.
Cardamom Bread (bread machine dough cycle)
1 egg
1/4 cup water
1/2 cup evaporated skim milk
1 teaspoon salt
1 1/2 teaspoons canola oil
3 cups bread flour
1 teaspoon ground cardamom
3 tablespoons white sugar
1 teaspoon active dry yeast
Place all ingredients into bread machine in the proper order for your machine.
Use the Dough cycle.
At end of the Dough cycle, remove dough from the machine. Place on a lightly
floured board, and let it rest, covered, for about 10 minutes.
Shape dough into a loaf, and place it in a 9 x 5 inch greased bread pan.
Cover, and let rise for 45 minutes.
Just before baking, brush the top of the dough with a little milk, and slash
a line down the center. Bake at 375 degrees F (190 degrees C) for 30 to 35
minutes. Remove from pan, and cool on a wire rack.
*You can divide and braid the dough as desired.
Cardamom Golden Raisin Almond Bread (bread
machine)

Cardamom golden raisin almond bread is a variation of a Danish sweet bread.
It is rich in butter, eggs, and cardamom. Sprinkled with a dusting of
confectioners' sugar, the loaf is also attractive when sliced, since it is
chock full of golden raisins and almonds.
2-CUP CAPACITY/12 SERVINGS
1 1/2 tsp active dry yeast
2 cups bread flour
1/2 tsp ground cardamom
3/4 tsp salt
4 tsp granulated white sugar
2 tbsp + 1 tsp nonfat dry milk
2 tsp unsalted butter or margarine
1/2 cup water
1 tsp vanilla extract
1 large egg
1 tsp lemon juice
1/3 cup golden raisins
1/3 cup slivered almonds
confectioners' sugar for dusting
3-CUP CAPACITY/16 SERVINGS
2 1/4 tsp active dry yeast
3 cups bread flour
3/4 tsp ground cardamom
1 tsp salt
2 tbsp granulated white sugar
4 tbsp nonfat dry milk
1 tbsp unsalted butter or margarine
3/4 cup plus 3 tbsp. water
1 1/2 tsp vanilla
1 large egg
1 tsp lemon juice
1/2 cup golden raisins
1/2 cup slivered almonds
confectioners' sugar for dusting
Cardamom is a very fragrant, flavorful spice that adds a spicy-sweet flavor
to baked foods. It is a popular ingredient in Scandinavian Breads, cookies,
and cakes.
All ingredients must be at room temperature, unless otherwise noted. Add
ingredients in the order specified in your bread machine owner's manual.
Add fruit and nuts at the appropriate moment for your model bread machine.
Set bread machine on the basic/standard bread making setting. If possible,
select light baking cycle. It not, use medium or normal setting. Do not use
the programmable timer when making this bread since the recipe contains
perishable ingredients. If desired, dust bread with confectioners' sugar
after bread has cooled to room temperature.
Carolina Rice Bread
3/4 cup water
1 1/2 teaspoons salt
1 tablespoon sugar
2 tablespoons dry milk
1 tablespoon butter
1 egg
1 teaspoon lemon juice
3/4 cup cooked rice
3 cups bread flour
2 1/4 teaspoons yeast
Add as directed by your bread machine. The
rice should be at room temperature, and drained well
Champagne Bread (Bread Machine)
3/4 C champagne
1 large egg
1 T butter or margarine
2-1/2 C bread flour, divided
1/2 t salt 1
T honey
3 t yeast, divided
At least 12 hours before you're ready to bake the bread, put the champagne,
2 t yeast, and 3/4 c bread flour into the machine and let it mix for a few
minutes. Then leave it overnight or for 12 hours, to form a sponge. After
that, add the remaining ingredients and bake on a regular/white or rapid
cycle.
