Gingerbread Loaf with Lemon Icing (bread machine)
Makes: 1 (1 1/2 pound) loaf

3/4 cup milk
1/4 cup molasses
1 egg
3 tablespoons applesauce
3 1/3 cups bread flour
1 tablespoon brown sugar
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1 teaspoon active dry yeast

Follow your bread machine mfg.'s directions for preparation of this type of bread.

Lemon Icing:

In small mixing bowl stir 1/2 cup sifted powdered sugar, 1/4 teaspoon vanilla, 1 teaspoon lemon juice and enough milk (1-3 tsp) to make
an icing of drizzling consistency.



Glazed Cinnamon Loaf

1 pk (5/16-oz) yeast
1 1/2 c Unbleached flour
1/2 c Bread flour
1 tb Cinnamon
2 tb Sugar
1 tb Margarine
1 ts Salt
1 tb Dry milk
7/8 c Water

GLAZE:
1/2 c Powdered sugar
2 ts Milk

SERVE HOT, AS A DESSERT BREAD OR FOR A FANCY BRUNCH. Put all ingredients in the order given into the bread pan, select WHITE bread, and push Start. After bread is cooled, blend powdered sugar with milk. Drizzle over loaf. NOTE: Enjoy the lovely aroma of this bread while it's baking and the sweet, spicy taste when it's done. Serve hot, as a desert bread, or for a fancy brunch. The perfect companion for fresh fruit and poached eggs. Makes 1 loaf, 8 slices.


Glen's Sweet Cinnamon Raisin Bread

Tired of those store bought brands of bread that don't live up to the claims on the package? Here is a recipe for cinnamon raisin bread that has a hard time lasting around my house.

Requires a bread machine, one and a half pound loaf.

3 cups bread flour
3/4 cup raisins(whole)
1/2 cup raisins (chopped)
2 teaspoons wheat gluten (my insurance policy for a good rise)
1/2 teaspoon salt
2 tablespoons sugar
1 egg
1/4 cup oil
3/4 cup water
1 tablespoon butter
2 tablespoons cinnamon
1 1/2 teaspoons yeast

Start with all ingredients at room temp. Combine all liquid ingredients and place in machine.

Add flour, gluten, the whole raisins, salt, sugar, cinnamon, and finally the yeast with a little divit in the middle of the pile and set the machine on bread basic with the setting on light.

Take the chopped raisins in a small bowl add 1 tablespoon cinnamon and 1 tablespoon sugar and work them together very well until all the cinnamon and sugar are completely stuck to the raisins, wait for the beep on your machine to add the raisin mixture. In about 3 1/2 hours you have the cinnamon raisin bread to die for! This recipe will make the whole house smell wonderful.
