2/3 cup milk
1 large egg
3 tablespoons butter or margarine -- cut up
3/4 teaspoon salt
2 1/3 cups bread flour
2 tablespoons sugar
1/2 teaspoon lemon peel -- finely grated
1/8 teaspoon ground nutmeg
1 1/2 teaspoons yeast
1/3 cup currants -- or raisins
3 tablespoons dried pineapple -- finely chopped
--or candied pineapple
1 large egg white
Directions for Bread Machine:
Add milk, egg, butter, salt, bread flour, sugar, lemon peel, nutmeg and yeast
to bread machine pan in the order suggested by the manufacturer. Select dough
cycle.
When cycle is complete, remove dough from machine to a lightly floured surface;
knead in fruits and enough flour to make dough easy to handle. Cover; let
rest 10 minutes.
Divide dough into 9 pieces; form each into ball. Place on large greased baking
sheet. Cover; let rise in warm, draft-free place until doubled, 30 to 45
minutes.
With sharp knife, cut shallow cross in top of each bun. Lightly beat egg
white and 1 tablespoon water; brush tops.
Bake at 375 degrees for 15 to 18 minutes or until done. Remove to wire rack;
cool. Drizzle with icing.
ICING: Mix 1/2 cup sifted powdered sugar, 1/4 teaspoon vanilla extract and
1 to 3 tablespoons milk until smooth.
Hot Cross Buns
BLACK AND DECKER BREAD MACHINE (2 lb/dough cycle)
1/13 cups milk
1 egg, beaten
1/4 cup butter
1/3 cup sugar
1 1/4 tsp salt
3 3/4 cups white flour
1 1/4 tsp cinnamon
1/2 tsp. ground cloves
1/4 tsp. nutmeg
1 1/4 tsp. yeast (I use 1 1/2 tsp)
ADD INGREDIENTS (AT BEEP):
3/4 cup raisins
1/2 cup candied fruit (like in fruitcake/Christmas cake - my addition.)
FOR THE GLAZE:
3/4 icing/powdered sugar
1 tbsp. milk
1/4 tsp. almond flavoring
Measure first 10 ingredients in the order listed into baking pan.
Insert baking pan into oven chamber; twist to secure. Close lid.
Select: Dough /Pasta Setting.
Press start - There will be a 25-minute preheat delay before mixing begins.
Add raisins (and candied fruit) when 'add ingredients' signal beeps.
When cycle is complete, remove dough from machine to a lightly floured surface.
If necessary, knead in enough flour to make dough easy to handle. Divide
dough into 18 pieces. Shape each piece into a round, slightly flattened bun.
Place 2 inches apart on greased baking sheets. Cover and let rise 30 minutes
or until double in volume.
Combine 1 slightly beaten egg with 1 tablespoon of water and brush on buns.
With sharp knife, make two cuts 1/4 inch deep on top of each bun to form
a cross.
Bake in preheated conventional oven at 350 degrees F for 15-18 minutes. Remove
from oven and immediately drizzle cross with glaze.
Makes 18 buns

1 1/3 cups milk
1 egg, beaten
1/4 cup butter (I melt it first)
1/3 cup sugar
1 1/4 teaspoons salt
3 3/4 cups all-purpose flour (4c. bread flour)
1 1/4 teaspoons cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1 1/2 teaspoons yeast
3/4 cup raisins or dried mixed fruit (1 c. is OK)
GLAZE:
3/4 cup icing sugar
1 tablespoon milk
1/4 teaspoon almond flavoring
Follow machine manufacturer's instructions. I select Dough/Pasta setting,
adding the fruit at the "add ingredient" beep. When cycle is complete, remove
dough from machine to a lightly floured surface. Divide dough into 18 pieces.
Shape each piece into a round, slightly flattened bun. Place 2" apart on
greased baking sheets. Cover and let rise 30 minutes or until double in volume.
Combine 1 slightly beaten egg with 1 Tbl. of water and brush on buns. With
sharp knife, make two cuts 1/4" deep on top of each bun to form a cross.
Bake at 350F for 15 minutes. While they bake, mix the glaze together. Remove
from oven and immediately drizzle cross with glaze. Yield: 18 Buns.
Hot Pretzels (bread machine)
Yield: 18 Pretzels
1 cup water
2 tsp butter or margarine
1 tsp sugar
1/2 tsp salt
3 cup all-purpose flour
1 1/2 tsp yeast
4 cup water
5 tsp baking soda
coarse salt (kosher or sea)
Put first six ingredients in bread machine pan and set for dough cycle.
Cut dough into 18 strips and roll into ropes. Shape into pretzels, cover
and let rise 45 minutes.
Bring 4 cup water and 5 tsp baking soda almost to a boil in non-aluminum
pan. Gently place pretzels into water for about a minute, turning once.
Remove pretzels and place on greased baking sheet. Sprinkle with coarse salt
and bake at 475 degrees F about 12 minutes.
