Mom's
Buttermilk Rolls for Bread Machine
3 Tbsp. oil
1/2 cup warm water
1/2 cup buttermilk, at room temperature
1 egg, slightly beaten
2 Tbsp. sugar or honey
1/4 cup instant potato flakes
1 tsp. salt
3 1/4 cup bread flour
1 1/2 to 2 tsp. instant bread machine yeast (I use Saf)
Put all ingredients in bread machine according to directions. Push dough
cycle. When dough cycle is complete, place dough on lightly floured surface.
Let rest ten minutes. Dough will appear not to have risen very much. Don't
worry, oven spring is great!
Shape into desired roll shapes. Allow to rise about 1 hour.
Bake at 375 to 400 degrees for 12 to 15 minutes or until done. Oh, I Sprayed
dough balls with butter-flavor Pam before baking. I then put butter on them
after they come out of the oven.
Mozzarella Tomato Bread
1 cup water
2 tbsp sugar
1 tsp salt
1 tbsp butter
1 cup mozzarella
1 tbsp sun dried tomatoes
2 tbsp dry onion
1 tsp basil
2 cups bread flour
1 tbsp dry milk
1 tsp yeast
Add the ingredients in the order your
bread machine requires, and process as usual.
Multigrain Loaf (bread machine)
1 1/2 pound loaf
1 1/4 cup water
2 tbsp applesauce, canned, unsweetened*
1 1/3 cup bread flour
1 1/3 cup wheat flour
1 cup multiGrain cereal**
3 tbsp brown sugar
1 1/4 tsp salt
2 1/2 tsp yeast, baker's, active dry/or 1 1/2 instant
2 tbsp vital wheat gluten
*I used the unsweetened applesauce instead of the oil - you can use oil if
you would like.
**I got my multiGrain cereal from the heath Food Store, it was 12 grain.
