Multigrain Bread
for Bread Machine

3/4 cup water
1 tablespoon honey
1 tablespoon butter
3/4 teaspoon salt
1 1/3 cups bread flour
1/2 cup whole wheat flour
1/4 cup rolled oats, toasted
2 tablespoons nonfat dry milk powder
2 tablespoons cornmeal
2 tablespoons toasted wheat germ
1 1/2 tablespoons bread machine yeast
Add ingredients to bread machine pan in the order suggested by the manufacturer.
(Grains vary in water absorption. If dough is too dry or stiff or too soft
or slack, adjust dough consistency.*) Recommended cycle: Whole wheat/whole
grain or basic/white bread cycle; medium/normal color setting. (If basic/white
bread cycle is used, add 1 tablespoon gluten to either size recipe.) Timed-bake
feature can be used. * Bread machine dough is slightly stickier than hand-kneaded
dough.
After mixing for a few minutes, the ingredients should turn into a dough
that forms a soft, smooth ball around the blade. If your machine seems to
be straining or if the dough appears too dry or stiff, add more liquid in
1-teaspoon increments to achieve the proper consistency. If the dough seems
too soft or slack, add additional bread flour in 1-teaspoon increments until
the proper consistency is reached. Do not add more than 3 to 4 tablespoons
of liquid or flour. Note: To toast the oats, spread in a thin layer in a
shallow baking pan. Bake at 350ºF for 10 to 15 minutes or until light
golden brown, stirring often.
Multi-Grain Dinner Rolls
1 cup water (80 degrees F)
1 large egg
3 tablespoons vegetable oil
3 tablespoons sugar
1 teaspoon salt
2 cups bread flour
1/2 cup whole wheat flour*
1/2 cup cornmeal
1/3 cup nonfat dry milk powder
1 tablespoon vital wheat gluten
2 teaspoons active dry yeast
TO MAKE USING A BREAD MACHINE:
Put ingredients into the bread machine pan in the order recommended by the
manufacturer. DO NOT USE TIME DELAY CYCLE.
Upon completion of the dough cycle, remove the dough and divide into 24 equal
pieces. Cover; let rest 10 minutes.
Lightly grease 12 (2 1/2-inch) muffin cups.
Shape each piece of dough into an oval and place two pieces in each muffin
cup. Cover; let rise until double.
Bake in preheated 375 degree F oven 15 minutes or until golden. Remove from
oven and cool on wire rack.
TO MAKE WITHOUT A BREAD MACHINE:
KWC Test Kitchen Note: This dough can be made using the traditional method.
Dissolve yeast in warm water (110-115 degrees F); let set 5 minutes.
Add the remaining ingredients except bread flour. Beat 2 minutes on medium
speed. Add 1 cup bread flour; beat 2 minutes. Gradually add enough remaining
bread flour to form a soft dough. Knead 10-12 minutes by hand or with dough
hook. Place in lightly greased bowl, turning once to grease the top. Cover;
let rise until double.
Punch dough down. Divide into 24 equal pieces. Cover; let rest 10 minutes.
Shape and bake rolls as described above.
From the contestant: I like to change recipes by adding other grains. These
are very good several days later if they happen to last that long! I think
the addition of the cornmeal gives the rolls a very appealing and natural
color to the finished roll.
Makes 12 rolls

Focaccia, Flat and Filled Breads For Your Bread Machine: Perfect Every
Time
MAKES ONE 1 1-INCH PIZZA
FOR THE DOUGH
2 teaspoons yeast
2 1/2 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 teaspoon olive oil
3/4 cup plus 3 tablespoons water
Place all the ingredients in the machine, program for Dough, Basic Dough,
or Manual, and press Start.
TO FINISH THE PIZZA
2 tablespoons olive oil
Salt to taste
Freshly ground black pepper to taste
1 1/2 cups tomato or pizza sauce or more if you're an extra-sauce fan
1 to 1 1/2 cups grated mozzarella cheese
When the dough cycle is completed, transfer the dough to a floured work surface
and let it rest for 5 minutes. Preheat the oven to 400F. Lightly dust
a heavy baking sheet with cornmeal and set it aside. Roll out the dough to
an 11inch circle. Transfer the dough onto the baking sheet. Brush the olive
oil over the surface of the dough and then shake on salt and pepper. Leaving
a 1-inch border, spread the sauce over the surface of the dough and top the
sauce with the mozzarella. Bake the pizza for 20 minutes until the crust
is a nice golden brown. Mystic pizza
