Yeast Bread Machine
Favorites
1 cup water -- 70-80 degrees
2 tablespoons water
2 tablespoons olive oil
2 tablespoons nonfat dry milk
1/2 cup potato flakes -- or buds
1 tablespoon sugar
1 teaspoon rosemary -- crushed
1 teaspoon salt
3 cups bread flour
1 1/2 teaspoons active dry yeast
-Fleischmann's Bread Machine Yeast
1 egg -- lightly beaten
------ TOPPINGS ------
sesame or poppy seeds
additional rosemary -- crushed
Measure all ingredients except egg and toppings and place into bread machine
pan in the order suggested by the manufacturer.
Process in dough/manual cycle. Remove prepared dough; if necessary, kneed
in additional flour to make dough easy to handle.
Divide dough into 12 pieces. Roll each to 10-inch rope; coil rope, tucking
under end. Place 2 inches apart on greased large baking sheet. Cover; let
rise until doubled, about 45 minutes. Brush tops with egg, sprinkle with
toppings. Bake at 350 F for 15-20 minutes or until done.
This recipe is for 1 1/2 pound size bread machines.
Potato Rosemary Rolls (bread machine)
Potato rosemary rolls are a favorite with all of our friends and family.
1 cup plus 2 tablespoons lukewarm water (70-80 degrees F)
2 tablespoon olive oil
2 tablespoon nonfat dry milk
1/2 cup instant potato flakes or buds
1 tablespoon white sugar
1 teaspoon crushed rosemary
1 teaspoon salt
3 cup bread flour
1 1/2 teaspoon bread machine yeast
cornmeal
1 beaten egg for glaze or 1 tablespoon melted butter
sesame seed, coarse salt, or poppy seeds for toppings
Measure and add warm water, olive oil, dry milk, potato flakes, sugar, rosemary,
salt, bread flour, and yeast to your bread machine in the order listed by
the manufacturer. Select Dough cycle and Start.
Divide dough into 12 pieces. Roll each into a 10 inch rope; coil rope and
tuck in the end so that it comes up through the middle. Place 2 inches apart
on a baking sheet dusted with cornmeal. Cover and let rise for 45 minutes.
Brush tops with egg glaze or melted butter, and sprinkle with topping of
choice. Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes.
Pumpernickel
Bread Machine (2lb. Loaf)

1 1/2 cups water
3 tablespoons powdered milk
2 tablespoons shortening
2 tablespoons honey
2 tablespoons molasses
1 3/4 teaspoons salt
1 cup whole wheat flour
2 1/3 cups all-purpose flour (2 2/3 c. bread flour)
2/3 cup rye flour
2 tablespoons cocoa
2 teaspoons instant coffee powder
1 1/2 teaspoons yeast
Place in BM pan as per manufacturer's directions. Black & Decker is in
order listed. Whole Grain setting, crust is preselected.
