Roasted-Garlic Bread
Source: Gold Medal Flour Gold Medal Homemade Breads (Gold Medal, Volume 1)
Makes one (12-slice) loaf

ROASTED GARLIC:
2 ounces garlic bulbs
2 teaspoons olive oil

BREAD:
1 cup water
1 tablespoon water
1 tablespoon olive oil
3 cups bread flour
2 tablespoons sugar
1 teaspoon salt
1 1/4 teaspoons active dry yeast

ROASTED GARLIC:
Heat oven to 350F.

Carefully peel away paper-like skin from around garlic bulbs, leaving just enough to hold bulb intact. Trim tops of garlic bulbs about 1/2-inch to expose cloves.

Place bulbs, stem ends down, on 12-inch square of aluminum foil. Drizzle each bulb with 2 teaspoons of olive oil. Wrap securely in foil; place in pie plate or shallow baking pan.

Bake 45-50 minutes or until garlic is tender when pierced with toothpick or fork. Cool slightly. Gently squeeze garlic out of cloves.

BREAD:
Mash squeezed and roasted garlic to equal 2-3 tablespoons; set aside.

Place all ingredients except mashed garlic in bread machine pan in the order recommended by the manufacturer. Select Basic/White cycle. Use Medium or Light crust color. Do NOT use delay cycles.

Add mashed garlic at the raisin/nut signal or 5-10 minutes before last kneading cycle ends.

Remove baked bread from pan and cool on wire rack.



Rum Raisin Bread (bread machine)

2 1/2 cups bread flour
1 tsp baking soda
1 tsp salt
1/4 cup pecans, chopped
1/2 cup raisins
1 1/2 tsp rum flavoring
3 tbsp sugar
1 tbsp vinegar & water to make 1 cup
2 tbsp powdered milk
1 1/2 tsp canola oil
1 1/2 tsp yeast

Place all ingredients in machine and push start.



Rum-Soaked Currant Bread

3/4 C water
1 C currants, soaked in spiced rum overnight, then drained
3 T rum from the drained currants
2 C bread flour
1 t salt 2 T sugar
2 t butter or margarine
1/8 t ground ginger or pumpkin pie spice
3 t yeast

Add all the ingredients to your machine, except the soaked currants, according to the manufacturer's instructions. Add the currants at the indicator beep. Bake on a sweet, regular, light, or rapid cycle. You may also prepare this bread on a timed cycle, if you don't mind adding the currants in the beginning and having them thoroughly incorporated into the bread.


Russian Easter Bread (bread machine)

This is a recipe I devised for use with my bread machine. I don't usually bake the bread in the machine, but I do mix the dough and let it do the first rise there. If you do the whole thing in the machine, use the Sweet Bread, light setting. If you bake it in the oven, do it for about 25 minutes at 350. Cover top with foil for last 10 minutes if it browns too quickly.

2 1/2 cups bread flour
1/4 cup light cream or half and half
1/4 cup milk
1/3 cup sugar
2 eggs
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 teaspoon yeast
1/2 cup raisins and glazed cherries, mixed

Heat milk, half and half, and butter till butter melts. Add to remaining ingredients in the order your machine requires. Add the raisins and cherries when your machine stops for adding "extras".

Shape as a round loaf and bake on a cookie sheet. Will make two small loaves, or one large one. This is a high riser in the bread machine.
