use with my bread machine, and this is by FAR my favorite (I have the update
2002 Hermes House Edition, but it is essentially the very same book)! Recipes
are very easy to follow (no impossible to find ingredients), and directions
are concise. I have yet to have a recipe turn out anything but a wonderful,
tasty loaf of bread... and the aroma is to die for!!! I love the numerous
photographs too! Buy this book if you are thinking of buying ANY breadmachine

Zoji Raisin Bread

1 1/4 cup buttermilk or homogenized milk
2 Tbsp sugar
2 Tbsp butter or margarine
1 tsp salt
3 1/2 cup (14 oz) bread flour
1 pkg active dry yeast
when beep sounds, add:
3/4 cup light or dark raisins*
Into baking pan measure milk, sugar, butter, salt and flour. Sprinkle yeast
over flour. Insert pan securely into unit; close lid. Select raisin bread
setting, then medium baking degree setting. Press Start. When Beep sounds
after about 30 minutes, open lid and add raisins. Close lid. The complete
light will flash when bread is done.
*Note from Ursula Taylor - dust raisins with flour before adding. Recipe
doesn't call for this but it works better. I also add a good tsp. of cinnamon
to raisins before adding and/or also add some to the flour.
Zucchini Bread
1-1/2 LB LOAF
3/4 c Milk
1/2 c Zucchini; finely shredded
1/2 c Carrot; finely shredded
1 tb Butter or margarine
1 ts Salt
2 c Whole wheat flour
1 c Bread flour
1 tb Brown sugar; packed
2 ts Bread machine yeast
1 ts Poppy seed
Add ingredients in order given by manufacturer,
adding zucchini and carrot with milk. Basic/white
bread cycle. Medium/normal color setting.
NOTE: Veggies vary in moisture content, so adjust
dough as needed.
Zucchini Bread
2 1/4 cups Bread flour
1 tablespoon Dry milk
1 teaspoon salt
1 tablespoon Butter
1/4 cup Walnuts (1 oz) -- chopped
1 teaspoon Cinnamon
1/2 teaspoon Ground cloves
3 tablespoons Zucchini -- grated
3/4 cup Water
1 teaspoon Dry yeast
Bake (Rapid) mode may be used. Place all ingredients (except liquids and
yeast)inside the bread pan. Add liquid ingredients.
Close cover and place dry yeast into the yeast holder. Press
start.
