"I have several breadmaking books I use with my bread machine, and this is by FAR my favorite (I have the update 2002 Hermes House Edition, but it is essentially the very same book)! Recipes are very easy to follow (no impossible to find ingredients), and directions are concise. Zucchini Lemon Bread

Large Loaf

3/4 cups shredded zucchini- 200 mL
3/4 water- 200 mL
3 tbsp vegetable oil-45 mL
3 tbsp honey-45 mL
1 tsp salt-5 mL
1 1/2 tsp grated lemon rind - 7 mL
1 1/2 cups Multigrain flour- 375 mL
1 1/2 cups White Flour- 375 mL
1 1/2 tsp bread machine yeast -7 mL

Select loaf size. Add ingredients to machine according to manufacturer's directions. Select White cycle.

Variations: Replace Multigrain Blend with Whole Wheat Flour.

Replace lemon rind with orange rind.



Zucchini Nut and Raisin Bread

3/4 cup zucchini -- grated
2 teaspoons salt
2 teaspoons active dry yeast
3 cups bread flour
1/3 cup rolled oats
3 tablespoons cracked wheat
3 tablespoons powdered milk
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
3 tablespoons oil
1 egg
1 egg yolk
1/2 cup water
3/4 cup raisins and/or nuts

Put grated zucchini in a colander or strainer. Sprinkle with half the salt, let drain for 30 minutes, and squeeze dry. Add all ingredients except the raisins and/or nuts in the order suggested by your manual. Bake on raisin bread cycle. Add raisins and/or nuts at beeper.

1 t Grated orange peel
1/4 c Wheat germ
1 1/2 c Whole wheat flour
1 1/2 c Bread flour
1 1/2 ts Yeast
-----LARGE LOAF-----
1 c Zucchini -- shredded
1 c Water
1/4 c Vegetable oil
1/4 c Honey
1 1/3 ts Salt
1 1/3 ts Grated orange peel
5 tb Wheat germ
2 c Whole wheat flour
2 c Bread flour
2 1/2 ts Yeast
